I think the tree is able to remove pollutants that it takes in, and deposit them in the bark, which then peels off. It is the repeated peeling of the bark that gives rise to the irregular mosaic patterns, and the different colours reflect the varying ages of the bark layers.
The bark of plane trees always fascinates me. I seem to remember it was good for living in a polluted atmosphere?
